Double Rainbow Cucpakes


Lucky Charms- Double Rainbow Cupcakes
Dessert 5/5 of the "Super Bowl Cereal Challenge"







As per the "Super Bowl Cereal Challenge", this dessert is made with a cereal (Lucky Charms) and applies to a youtube video. Can you guys guess which? 

Let me give you a hint. "OH MY GOSH!" 


These are just from a mix and a can! I was making so many other things, I decided to cut corners here. I divided the white cake mix batter into 6 small bowls, dyed them each color, and poured them one at a time into cupcake pans. It created the rainbow marble look beautifully, and in the proper layers! I love this, really. It was so so fun. I just frosted them with a can of Whipped Vanilla icing and then put rainbow marshmallows from Lucky Charms cereal. That way, the cake AND the marshmallows were both rainbows, providing, OH MY GOSH! a Double Rainbow! A perfect match for the youtube vid :)

These were my favorite in terms of look and success. Everyone got the reference and they looked so pretty. Even the wrappers looked lovely from the dye! And it was pretty amusing how the dehydrated marshmallows became soft again from the moisture in the icing. Overall, rainbow cupcakes ftw!

Strawberry Stuffed Jar Jar Binks Cheesecake




Everyone hated this dessert.



Not because it tasted bad. Just because of the Jar Jar things about it. And Jar Jar needs to be cut into pieces.



This is a plain cheesecake recipe I found here. I made it, chopped in about a container of strawberries, piped Jar Jar on, and put a fruit by the foot tongue on the whole thing. I loved it, the foot tongue made me endlessly happy.

As did cutting up his face. He's annoying but, he tasted divine.

Han-Clair Carbonite Cake




So remember this recipe I made here? Yes. It's my favorite. I made it for this party and put a Han solo action figure in it. And then I dusted it with powdered sugar. 





Look how yummy those layers are. Ignore the tortured Han hand peeking out and just be amazed by the yummy dessert here.





This is powdered Han. I liked how it looked a little bit later when the sugar dissolved into the chocolate.

He's all frozen in the chocolate equivalent of Carbonite. Color me obsessed with this dessert.

Darth, C3PO, & R2D2 Assorted Chocolate Peanut Butter Pretzel Cupcakes



These are Chocolate Peanut Butter cupcakes that are filled with Chocolate Covered, Peanut Butter, filled Pretzels. Yep. Long name.


In the shape of C3PO, Darth, and R2D2. They look just as good cut up as they do geeked.



Look at that filling. Yummm. They are next to my Cookies and Cream Cupcakes which I decorated to look like Lei and Ewoks. Way WAY too much fun.


To make C3P0, I iced the cupcake with yellow icing, pipped some details with orange, and then put two orange pretzel M&Ms on as eyes. I added some black for eyes and a line'd mouth. 


Saw these on this pic on flickr and decided I could make something like it. I piped the sabers, rolled a Reisen flat, cut it up into the shape of a helmet, and iced on the Darth details. It worked like a charm! And then I had a lot of the chocolate caramels left at the party. 


See? Yum.



R2D2 cupcakes! They are just iced freehand. Turned out fun. I beeped a lot while serving.

Leah & Ewok Assorted Cookies and Cream Cupcakes




These are vanilla cupcakes with some oreos crushed inside and then one making the case. The outsides are also decorated with oreos and they look like Ewoks and Lei. 



They were adorable. And delicious.



Here's a shot of the inside. Next to the image of the cupcake interior below you'll notice the chocolate peanut butter cupcakes that are filled with peanut butter, chocolate filled, pretzels. Those were my favorite. They weren't decorated as Ewoks though, which won my heart. They were decorated as C3PO, Darth, and R2D2. But anyway! Back to these. 




GOSH! Look how friggin cute these cupcakes are! I love Ewoks. They are so cute. They make the 3rd movie 1,000 times more adorable and amazing. I messily iced it, pushed some crushed oreos on as the face, piped the hood-line, and covered up any oreo pieces. Then I put two mini oreos in as ears and piped some chocolate eyes and a nose on.






These cupcakes are iced with some vanilla icing I twinged with pink. I stuck two large oreos on the side with some messy icing, piped some black hair bangs, and then used heart and circle sprinkles for her lovely lil face. Loved this!



Both cupcakes went over well. I liked them lots. Hope you kids do too.

Bleeding Cylon Cupcakes





These are so geeky, I almost couldn't bear posting them.

I did anyway, obviously.

But these are so exceptionally nerdy, I almost couldn't believe I made them.

Just one more way Battlestar Galactica has made me supremely geeky. 





Okay, so. For those of you who are not nerds. These cupcakes are called "Bleeding Cylon Cupcakes" because, in the show, Cylons are robots that have been engineered and evolved to such an exquiste degree that, they bleed when cut open.

These chocolate raspberry cupcakes also bleed when they are cut open.

Even without the chocolate Cylon, these cupcakes are chocolate raspberry delicious. The simple recipe and yum factor are both a win.

Bleeding Cupcakes
-1 box cake mix
-1 jar raspberry preserves
-Enough vanilla butter cream to cover a dozen cupcakes, recipe below if you don't have one. But a can from the store will do in a pinch :)

Make the cake according to the boxes directions. Once baked/cooled, cut a portion of the top out, slice out some of the inside of the cupcake, and fill with jam. Generously. Place the top back on. In microwave, melt about 1 tbsp of jam until the consistency of a raspberry syrup. Brush over the tops of the cupcakes, sealing the cut out tops in place. Place in fridge for 30 mins- 1 hr. 

Add some raspberry jam to your icing to flavor it with a slight raspberry taste and some pretty seeds. I also added some bright food color for a proper "Cylon pink guts" color but, that's unnecessary, just fun. When cupcakes are set, remove from fridge and frost with icing. Top with nerdy chocolate Cylon if you so desire. Serve and enjoy :)

To make some Cylons: melt chocolate chips in a ziploc in your microwave. When melted, cut off the tip of the ziploc, pipe onto wax paper in the shape of the Cylon's helmet. Using gel frostings (I got metallic ones at the store) pipe the specifics of the helmet, including the red sensor beam. 

Very important, ha.

To make butter cream icing: 
-1 package powdered sugar (16 ounces)
-1/2 cup butter, softened (1 stick)
-3 tablespoons milk
-2 teaspoons vanilla
Beat sugar, butter, milk and vanilla with electric mixer at low speed until well blended and smooth. If frosting becomes too thick, beat in additional milk by teaspoonfuls until the frosting is of spreading consistency.

Super"Bowl"- AYoutube & Cereal Challenge





So. My friend gave me a challenge. A really geeky, really stupid, really fab challenge. Our conversation itself was geeky, with my actually saying "Challenge Accepted" when she described her proposed dare and then our friend taking our hands as we shook on our agreement in exact HIMYM style, (see these scenes to see how it exactly broke down).


For every dessert I made for our super bowl party, I had to fit the theme "Super Bowl". And I also had to have each dessert pay homage to a popular youtube video. 


Challenge accepted! She judged my treats at the party, and I apparently passed with flying colors. To fit the Super "Bowl" theme, I used cereal in each dessert. Get it? Because cereal is super and served in bowls? 


Yoda Lime Bars





Lime bars shaped like Yoda! And colored green to match his signature color. I found this recipe for lemon bars and decided to make some green lime bars to utilize the Yoda shaped pancake mold I have from William Sonoma. I had already used my Storm Trooper and Vader mold so, Yoda was due to have a turn. 


These lime bars were truly luscious. Creamy, sweet, yet tart. The oats were a great touch and made the entire treat more homey in flavor. 


The green was a touch too far on the slime green color in the green spectrum, not necessarily a good "Yoda" green. But I still thought it was fun.


The only thing I would say about this recipe is there was MUCH too much flour in my batch. I don't know if I measured wrong or the recipe just has too much powder for my taste but, I would cut it easily in half. Next time I make these, I will be sprinkling flour into the crust until it's an amount I like more. I'd like the crust to be composed of more brown sugar and oats anyway.

Lime Bars:

  • 1 can (14 oz.) sweetened condensed milk
  • 2 teaspoons grated lime zest
  • 1/4 cup fresh lime juice
  • 1 1/4 cups flour (As I mentioned before, however. Mine needed far LESS flour so next time I am going to add flour slowly, just until I like the consistency. Do as you like though, Jill's looked great!)
  • 1 cup old fashioned oats
  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
Heat oven to 375ºF degrees. Coat 8x8 inch pan with non-stick cooking spray. Mix milk, lime zest and lime juice in medium bowl until thickened; set aside. Mix remaining ingredients in medium bowl until crumbly.
Press half of the crumbly mixture in pan; bake about 10 minutes or until set.
Spread lime milk mixture over baked crust. Sprinkle remaining crumbly mixture over the lime milk mixture, press down gently. Bake about 20 minutes or until edges are golden brown and center is set but soft. Cool completely. Cut 4 rows by 4 rows. Or into Yoda if you want to magnify the dessert's awesome.

The Cake is NOT a Lie.... 2 Ingredient Soda Cake



So, for those who are unfamiliar with the video game "Portal", I don't suppose this post's name makes a whole lot of sense...

I suppose one could simply summarize the game for the newbies who come across this page but, the important part of the story is really just that this recipe is a complete facade. You should go play portal and work it out for yourself. This here though, is DISGUSTINGLY simple. It is cannot count as a recipe, it is a completely ridiculous, just 3 ingredient, recipe. For a cake. 3 ingredients, including the can of icing, FOR A CAKE. And YET! It really is just three ingredients. Including the can of icing!

This is "No Lie" Cake. It's fluffy, light, and made with just one can/12 oz bottle of soda and a cake mix. That's all.

Being a stage 10 klutz, I still made my kitchen/self a disaster. As you can clearly see, right here:

But in the end, the cake turned out nicely.


This cake, shown here, is a vanilla cake mix made with a black cherry soda. You simply combine the cake with the pop and mix it. I never used a hand mixer, just a big spoon, but I imagine that would make it even more ridiculously fluffy. I topped mine with a can of icing (vanilla) and ATTACKED everything with sprinkles.

I piped "no lie" in melted chocolate that I let cool in the fridge until it'd create that nice 3D look and, ta-da! "No lie" Soda Cake.

Anyway, please make note that this cake is simple and you should keep it simple when working with it. Twice now I have overshot the ability of this treat to hold its shape once free of the pan. I will never do so again. That is the main reason I got into an epic battle with those sprinkles. The cake was near cracking, in a desperate attempt to glue it together with frosting, I covered it with sprinkles to keep things in place. Just save yourself the nightmare, keep it in a pan or in a single layer. You'll be happier, promise.

Make and enjoy :)

Soda Cake
-1 box cake mix
-1 can/bottle (12 oz) soda

Choose any flavor of both cake mix and soda. Stir to combine.
DO NOT ADD EGGS, OIL, OR WATER. SERIOUSLY- JUST THE SODA.

Pour into greased pans, bake at 350 until a tooth pick comes out clean (approx 25 mins). Cool it entirely and top with icing, powdered sugar, or cinnamon to your liking. Yellow cake mix with coke and cinnamon is delicious. Dr. Pepper with chocolate cake is also intriguing. Try something fun and let me know how it goes!
